Prepare
- Cook the rice according to the instructions on the package and roast the cashew nuts in a dry, hot frying pan and keep them aside for now.
- Heat the wok oil and stir fry the vegetables for 3 to 4 minutes. Add the red curry and fry for about 1 minute.
- Pour the coconut milk into the mixture and mix well. Bring to the boil while stirring. Cook everything gently for 1 minute.
- Serve the curry with the rice and sprinkle with the red onion, coriander and cashew nuts.
